  • 1 lb of boneless chicken thighs, cubed
  • 1 tsp salt
  • 2 tbsp olive oil


  • 1 tbsp cup brown sugar
  • 1 tbsp cornstarch
  • 1/2 cup pineapple juice
  • 1/3 cup apple cider vinegar
  • 1 tbsp soy sauce
  • 1 green bell pepper, chopped


  • 2 cups white rice
  • 2 cups chicken stock
  • 2 cups water


  • 2 fresh scallions
  • 1 tbsp sesame seeds

  • 2 cups medium-grain white rice
  • 2 cups chicken stock
  • 2 cups water

  • Heat your olive oil in a large pan over medium heat.
  • Add the chicken to the pan, salt to taste.
  • Stir occasionally until all chicken is lightly browned.
  • Remove chicken pieces to a bowl and set aside.
  • In the same pan, saute’ your bell pepper (and whatever other vegetables you’d like to include) until soft.
  • In a separate bowl, combine the pineapple juice, apple cider vinegar, soy sauce, brown sugar, and cornstarch. Whisk until fully combined.
  • Pour your pineapple juice mixture into the vegetables and raise the heat to medium-high, whisking often.
  • When sauce has thickened, return the chicken to the pan then turn the heat down to medium-low.
  • Simmer for 7 minutes.


  • Pour your rice into a medium-sized pot. (Measurement can vary depending on how much you would like to make.)
  • Add the chicken stock or broth and water, in equal measure to the rice.
  • Stir to combine then turn the heat to medium-high.
  • When the broth and water are fully absorbed, take your rice off the heat.

To serve, plate the rice, then spoon the chicken and sauce over the rice. Sprinkle your beautiful dish with chopped scallions and sesame seeds.
