  • 1 whole chicken, cut into individual pieces
  • 8 red potatoes, cut into wedges
  • 1/4 cup Italian dressing
  • 1/2 cup crumbled mozzarella cheese

Directions

  • Heat your oven to 400F/205C
  • In a large bowl, add the coarse salt (to taste) to potato wedges and toss well.
  • Add the Italian dressing, making sure each wedge is fully covered.
  • Using a slotted spoon, transfer your potato wedges to a metal sheet pan (a glass casserole dish will work fine too), allowing any excess dressing to remain in the bowl.
  • In a separate bowl, drizzle chicken pieces with the remaining dressing until well coated.
  • Salt to taste.
  • Transfer chicken pieces to the pan with potatoes.
  • Top with crumbled mozzarella.
  • Place pan on center rack in heated oven and cook for 60 minutes or until chicken pieces reach an internal temperature of 165°F/73°C.
  • Top your delicious chicken and potatoes with fresh rosemary before serving, if preferred.

Can you cook raw chicken on top of potatoes?

Yes! To safely bake chicken and potatoes in the same pan and ensure that everything fully cooks, spread equal-sized potatoes (either cubed or wedged) across your pan. Lay your chicken pieces evenly atop the potatoes with a bit of space between. Bake until the internal temperature of your chicken is 165°F / 73°C.

When cooking chicken, it is important to ensure that it reaches the recommended internal temperature of 165°F (74°C) to kill any harmful bacteria, such as salmonella.

This is the temperature at which any existing bacteria will have burned away, leaving tender and fully cooked chicken and potatoes.

Should you cook chicken covered or uncovered?

When cooking chicken, whether to cover it or leave it uncovered largely depends on the method you are using and the desired outcome.

Either way will result in lovely, fully-cooked chicken. However, each way will produce a different result.

Covering the pan with aluminum foil will keep the moisture in, allowing more tender meat to develop with softer skin.

This is particularly beneficial for methods such as braising, stewing, or baking, where a moist cooking environment is desired. On the other hand, leaving chicken uncovered is ideal when you want to achieve a crispy exterior, as in the case of roasting or grilling.

Uncovered will result in extra crispy skin on both the chicken and potatoes in the above recipe with a less juicy bite.

I do both. Cover the pan with foil, then halfway or three-quarters of the way through (your choice), remove the foil and allow the skin to crisp up.
